Mine was the original Battlestar Galactica, although it appears people on the Internet are no longer convinced it was a ripoff. At the time (1978), everyone was convinced it was a direct borrowing of Lucas' ideas, mainly because of the spaceships. The special effects team for BSG had worked on Star Wars and Lucas and 20th Century Fox even sued (the lawsuit was dismissed in 1980).

I'm going to read the headline a different way, and say that my favorite thing that Star Wars ripped off was the Mars series of novels by Edgar Ruce Burroughs. In particular, the visuals from jacket covers by artists like Frank Frazetta and Gino D'Achille.
