Up until recently, Anakin has been using the lightsabers given to Padawans for training. The one Luke gets is probably the one he built to complete his training into Jedi Knighthod.

I beleive that is what one uses until one builds thier own. Building your own lightsaber is one of the final trials to becoming a Jedi Knight. The one he has in Ep.3 is sureley the one that is passed on to Luke and lost at Cloud city over Bespin. Vader then must build another (nice neat Sith Red one) that is then later passed on to Leia when she decides to learn to use the force.

I am not sure if she keeps using it when she decides to continue her training later but she does use it to start training and uses it to fight a bit as well.
